Un-Canned Comfort: Homemade ABCs and Meatballs.

Sometimes hunger strikes instantaneously. Sometimes it presents itself as a precise image, sensation and flavor. Sometimes you want to eat before you even have the chance to get to the fridge. So was the case on a rainy afternoon last week, I craved the comforting flavors of a childhood can of Spaghetti O's, which I hadn't eaten in decades!
I didn't really consider this to be blog post material, but when my friend asked for the recipe because her children asked not only for seconds but thirds, I thought, hey why not? Sooooo quick and easy to make homemade comfort food and so incredibly satisfying. I made it a one pot meal! Three basic ingredients and a whole lot of deliciousness! Here goes, my ABCs and meatballs!
Sauté one package frozen turkey meatballs in olive oil. I like to get them crispy outside so when they bathe in tomato sauce they keep their texture.

Once they brown, I add some butter and let it bubble up.
Once it bubbles, add a can of tomato sauce or puree and let it come to a boil.
Once it boils add a cans worth of water, stir and wait for that to boil.
Then add the pasta and stir until it thickens up, just a few minutes.
Plate and serve. I added cottage cheese to mine.

It was perfectly satisfying. The comforting simplicity of childhood in a one pot meal, that has plenty of leftovers, and many ways to spice it up. This is just a canvas, you can add more sauce to reheat, add cheese, add spices or kick it up a few notches with different meats. Either way you can't go wrong, and if you pay attention, you may find a word on your spoon.
